Why can’t the custard stand out for an hour?

Custard is a high-risk food. Between 5°C and 60°C, bacteria can double about every 20 minutes, so after an hour there can be eight times as many. Keep it in the fridge until you fill the pastries.

PracticeYour fridge reads 8°C at 07:00. What do you do first?
